Zia Matoori has worked in the culinary field for nearly 28 years. He started out with Marriott Hotels at the Lake of the Ozarks, worked at the Country Club of Missouri for six years, and has spent the last 14 years at Churchill’s. His philosophy? Use the finest ingredients and present them with elegant simplicity. Matoori’s traditional Mediterranean menu for the Wine & Food Festival will be summery and refreshing to match the feel of the season.

1st Course: Pomodoro
With Roma tomato, fresh mozzarella, procuitto ham, fresh basil and a roasted garlic vinaigrette
2nd Course: Spinach, shrimp and Blue Crab bisque
3rd Course: Caesar salad
Prepared table side with Churchill’s own Caesar dressing
4th Course: Lamb and lobster Mediterranean mixed grill
Marinated lamb broiled with a fused olive oil and lobster medallions with a truffle citrus sauce. Served with asparagus and a saffron couscous
5th Course: Missouri peach and fresh raspberry flambé
